This program will focus on introducing youth aged 14-21 to professional culinary arts through study and application of basic principles and fundamental techniques, including food safety, purchasing, menu planning and budgeting, and service.

The program will be delivered in person at the Paterson GlobalFoods Institute, part of RRC Polytech’s Exchange District Campus.

Topics and Deliverables

You will learn basics of the Culinary Arts, covering topics such as:

  • Knife skills
  • Food safety
  • Menu planning
  • Budgeting and shopping

By the end of this program, you will have completed:
